This is my favorite go-to nighttime snack. It’s super simple, light, and boasts a ton of health benefits. I often make this when I have guests coming over, and it’s especially refreshing in the summer months.
I call this my Cool, Tasty Cucumbers recipe, and it only takes a few minutes to make and lasts a week in the fridge. The best thing I love about this recipe is, once you have the base made, you can just keep adding more cucumbers to it all week long!
Prep Time: 20 minutes
Make Time: 2 hours in fridge for flavors to set
Ingredients:
-3-4 large cucumbers, peeled and sliced
-2 tbsp coriander citron vert salt (or to taste)
-1 tbsp black pepper (or to taste)
-1 bottle white vinegar
Instructions:
-Peel and slice the cucumbers and place them in a glass, rectangular dish that is at least 2″ deep.
-Then, sprinkle the coriander citron vert salt and the black pepper over the cucumbers.
-Finally, pour enough white vinegar into the dish to cover the cucumbers, place a lid on your container and refrigerate for 2 hours
-Eat and enjoy!
-Feel free to add more cucumbers to your base mixture throughout the week to keep your healthy snacking game strong.

Lastly, it’s full of antioxidants which play an important role in promoting body health.
