It’s March! I can’t believe we’ve already made it 60 days into 2021, and so far, it just keeps getting better. I’ve seen so many friends go through some amazing transformations and better themselves with the motivation of the new year, and I’ve been staying on track as well. One of the things you guys know I love to do is meal prep, so I’m going to share my go-to meal recipe this week. I legit post this 24-7 lol, it’s so good! Here’s the story on how I discovered this delicious meal.

We all know that I’m a huge fan of The Real Housewives shows. Last year, there was some controversy with one of the housewives of Beverly Hills, Teddi Mellencamp (@teddimellencamp), the famous daughter of John Mellencamp. She owns a fitness company called Go All In by Teddi (@goallinbyteddi), and all of the sudden, she was being bashed by women saying the cookbook she had released was basically a manual for starvation. It was all over the media, with hundreds of people bashing her, saying her recipes were basically just “eat lettuce and drink water.” I knew she was very strict about her fitness (as shown on the show), but could she really be telling people to eat lettuce all day? “No way!” I thought.

So of course, me being the curious cat I am, I had to download the cookbook. Contrary to what the media was saying, I quickly learned that this cookbook was actually amazing! I shared some of the recipes with friends and made several of them for myself. My ultimate favorite recipe of hers is the Taco Soup recipe. It’s light, it’s healthy, and I can make it and eat it for four days. I love it! Packed with protein, it definitely keeps me going on long days, and we all know I work about 15 hours days and hit the gym daily.

Here is Teddi’s Taco Soup. I like to add 6 cups of water and extra diced tomatoes when I make it, then top it off with lime and avocado.

INGREDIENTS
-1 can of black beans, rinsed and drained
-1 can of corn, rinsed and drained (or 1.5 cups frozen)
-2 cans diced tomato
-1 can green chiles
-1 package of TJs lentils (or 1 lb of ground meat)
-1 jalapeno, chopped (optional)
-1 onion, chopped
-5-7 cloves garlic, chopped
-1 tbsp cumin
-1 tsp chili powder
-1/4 tsp dried garlic
-Juice of one lime
-1 cup of water
-Salt and pepper to taste
-Handful of chopped cilantro
-Avo and more cilantro to top

DIRECTIONS
-Heat a large pot over medium high and add a splash of olive oil.
-Sauté onion until softened, then add seasonings, garlic and jalapeño, sauté until fragrant.
-Add all canned ingredients and stir.
-Bring to a simmer, add 1 cup of water and chopped cilantro.
-Season with salt and pepper to taste and simmer a few more minutes.
-When ready to serve, top with chopped avocado and cilantro.
