Recently I noticed that I had a ton of Costco egg white containers that were about to expire and I hate wasting food. I noticed that I had a lot of salad stuff in the fridge, so I decided I’d experiment with a bunch of quiches and give them to some friends. Funny enough, the craziest one I made for fun was actually the favorite of the bunch.
Quiche is a French tart consisting of pastry crust filled with a savory egg custard baked with pieces of cheese, meat, seafood, or vegetables. A well-known variant is Quiche Lorraine, which includes usually includes bacon, onion, and Swiss or Gruyere cheese. Quiche may be served hot, warm or cold.
It really is one of my favorite items to make and is the perfect way to use up any leftover eggs or egg-whites in the fridge. Today, I’m going to give you the 3 Easy Quiche recipes that I made.
For each Quiche base I used:
-1 carton of egg whites
-2 regular eggs
-1 pie crust
-½ bag of Cheddar and Monterrey Jack Cheese, mixed.
PIZZA QUICHE
-1 cup sliced peperoni (cut into quarters)
-Italian Seasoning (I added the seasoning only on top of the egg mix, not mixed throughout, so it wasn’t overpowering.)
BREAKFAST VEGGIE QUICHE
-¼ cup onion
-¼ cup sliced bell peppers
-1 cup breakfast sausage
-1 jalapeno
-Scallions
MEAT LOVERS QUICHE
-6 slices of bacon
-½ pound of deli ham
-¼ cup breakfast sausage
-Some diced onion
The trick to making quiche is you must cook all your filling toppings first, then pour those in the pie pan and add your cheese, pour the egg, and add more cheese on top. Set your oven to 375°F and bake for about 30 minutes or until the center is completely set. Once removing it from the oven, let it rest for about 20 minutes before serving.
You can add a little spring mix salad and dressing to the side, some fruit, and voilà! It’s brunch time anywhere! Be sure to bring down to room temperature before storing in the refrigerator. You can also pop it in the microwave later for a quick bite.
